Flawless gluten free brownies
I wanted to rustle up something gluten-free and yummy for an afternoon tea with friends, one of whom doesn't eat gluten. These brownies were just the ticket.
I came across this recipe from Doves Farm, which uses their gluten free plain white flour.
My essential changes to the recipe are to use dark brown muscavado sugar and the best 85% cocoa chocolate you can afford. This will make the brownies extra rich.
I used a pyrex oven dish, lined with greased tin foil, which worked great and produced deep, squidy brownies in the time the recipe gives. Obviously, if you use a shallower dish or a metal tray, you'll need to cut down the cooking time.
Honestly, I'm just as happy eating these as regular brownies. They are moderately more crumbly for the lack of gluten, but not unmanagable by any stretch.
